Description: This exceptional chef's knife is the work of Canadian bladesmith Kelly Dallyn. The maker's mark on Kelly's knives is his family's cattle brand, which has been passed down to his dad by his grandmother. He thought that when he started to make knives, he would use something that stood the test of time to mark them. With this brand on his knives and the craftsmanship that he put into them, he knows they will stand the test of time long after he is gone.
The santoku is the traditional Japanese chefs knife. This comfortable design is a fantastic multipurpose chopper. The santoku style has quickly become the new favorite for chefs in the West. The blade is hand forged from 608 layers of 1080 and 15N20 carbon steels. This ensures a keen edge as well as exceptional beauty! A clear differential heat treatment is visible in the blade which results in a long lasting edge, with strength and durability for the spine.
Cocobolo scales are set on a full tang with mosaic and copper pins. The knife has great balance and feels exceptional in the hand. Copper bolsters are dovetailed to the cocobolo ensuring a perfect fit. The copper brings out warm tones in the natural wood.
