Description: If you spend any time in the kitchen, would like to have a knife that is as attractive as it is useful, and don’t want the typical off-the shelf chefs knives, check out this beauty.
It utilizes a very deep choil (cut-out) for the forefinger to rest in. This makes the knife easy to hold onto even with slippery hands. The blade is made from ATS-34, high carbon stainless steel made by Hitachi. It is hardened and double tempered to about RC/59-60, then hand rubbed to a satin finish. It has extensive modified serpentine filework along the spine of the blade, which is not only decorative but adds a non-slip area on the back of the blade to rest the thumb. The blade is quite hard and takes an excellent edge.
