Description: The nakiri usuba is a traditional Japanese knife form ideal for chopping fruit and vegetables. The edge is double-beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers.
Tojiro DP Damascus knives are designed for the chef looking for a superb tool that is also an object of subtle beauty and distinction.
The core of the forged double bevel laminated blade is made from pure stain-resistant high-carbon steel alloyed with molybdenum overlaid with 36 separate fine layers of steel, alternating between high-carbon and low-carbon stainless, giving the knife exceptional strength. These layers are then polished to create a subtle, shimmering patterning effect to the blade surface. The effect of this technique is called suminagashi in Japanese, which translates as floating mist. The result is a blade that will take and hold an extremely sharp edge, but is strengthened by the Damascus outer layer.
The handles are formed from Pakawood, laminated hardwood impregnated with resin.
