Description: A perfect knife for preparing fish for sushi and other uses, this long bladed, handmade knife is a work of art. Thomas' experience working as a professional chef shines through in this creation. His graceful design is effective and feels great in the hand. The right handed, single bevel blade is well designed for balance and excellent edge geometry. The steel, S60V is considered by many to be among the best steel for chef's knives. It is extremely hard and takes on a superior razor edge and holds it. The curly koa handle has nice figure and has two decorative mosaic pins. Excellent fit and finish throughout.
