Description: The blade wraps back beyond the choil to help shift the balance point closer to the handle. Multiple holds are very comfortable with this chef's knife, whether your hand is back on the handle, or forward to utilize the choil. The ATS-34 high carbon stainless steel blade has been heat treated and double tempered to a hardness of RC/59-60, then hand rubbed to a satin finish. It has extensive filework along the spine of the blade, which is not only decorative but adds a non-slip area on the back of the blade to rest the thumb. The blade is quite hard and takes an excellent edge.
