Description: From carving roasts to cutting large vegetables and fruits, a slicer's long slender blade is a great choice. Particularly suited to slicing roasts and hams.
Kasumi knives are forged in Seki Japan, an area with over 800 years of smithing history. The blade is formed by forging folded layers of soft stainless steel (called a Jigane) around a central core formed from VG10 stainless steel. The central core is tempered to 59 - 60 Rc, ensuring an exceptionally keen, long-lasting edge.
The blade is forged quite thin so as to have little or no resistance when cutting through food. Following in the best tradition of knife making, a steel ferrule is forge-welded to the tang to ensure that food particles cannot become lodged between the tang and the handle. The handle is formed from black resin impregnated hardwood (Paakawood).
Kasumi knives hold up exceptionally well in both a home or professional kitchen environment.
