Description: The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is more suited for preparation of raw meat as well as use as a general purpose chef's knife. The long blade is needed for the sawing motion required to cut meat and the slim profile keeps the weight low and the balance right.
Kobayashi-san, purveyor to the Imperial Court, creates Hocho that are perfectly shaped compositions made from the finest materials. The blade is forged from blue steel #2, among the most prized of carbon steels. This steel has exceptional edge holding and takes a keen edge. The center core is forged between two layers of low carbon steel. The surface is rough ground (kurouchi finish) so that food does not stick to the sides of the knife while slicing. Because the blades are forged from carbon steel, rather than stainless steel, they require minimal additional care to prevent corrosion and staining, but have a far keener edge than their stainless counterparts.
The right-handed 'D' shape handle fits comfortably and securely in the hand and is best used by a right handed user. It is formed from ho wood, the traditional wood for Japanese handles. This wood, which is a relative of magnolia, holds up extremely well in the harsh environment of the kitchen. It is finished off with a black molded ferrule. Each knife is sent in a nice gift box.
