Description: Gyuto hocho, modeled after the French pattern chef's knife, are a great general purpose chef's knife for tasks around the kitchen. The taller blade on this gyuto provides finger clearance while chopping over a cutting board and makes it very useful and versatile from slicing to chopping.
The blade is forged from Takefu V2, among the most prized of carbon steels. Tempered to 62 - 63 Hrc, this steel has exceptional edge holding and takes a keen edge. This center core is forged between two layers of mild steel. The surface is hammer finished so that food does not stick to the sides of the knife while slicing. Because the blades are forged from carbon steel, rather than stainless steel, they require minimal additional care to prevent corrosion and staining, but have a far keener edge than their stainless counterparts.
The right-handed 'D' shape handle fits comfortably and securely in the hand and is best used by a right handed user. It is formed from ho wood, the traditional wood for Japanese handles. This wood, which is a relative of magnolia, holds up extremely well in the harsh environment of the kitchen. The handle is finished off with a durable buffalo horn ferrule. Each knife is sent in a nice gift box.
