Description: John Leitch's paring knife will feel as at home in a collection as they will in the kitchen. The ATS-34 stainless steel blade was etched with a relief for his maker's mark. This results in a "satin finish" that has made his work well known. The ATS-34 stainless steel blade was heat treated by Paul Bos to Rc 59 and will have exceptional edge holding.
The small size of the blade (2 inches) makes this an ideal knife for for detail tasks such as removing the heads from strawberries and eyes from potatoes.
The fit between nickel silver bolsters and cocobolo scales is excellent -- without a perceptible seam. Exceptional work throughout!
