Description: Michael Rader, who was honored as a journeyman smith June 2006, is best known for creating dramatic swords and daggers with woodwork that is beyond compare. Recently, he put his attention to creating knives for chefs. The results are exceptional.
Like his hunting knives, this paring knife was pre-tested for edge flex and cutting ability before assembly. Many knife collectors and chefs feel that 52100 is among the best, if not the best, steel for edge holding. The edge is extremely keen and will stay that way for a very long time. Paring knives come in handy for all sorts of detail tasks around the kitchen. One of the most used knives for anything from peeling fruits and vegetables to chopping garlic.
The blade has been antiqued using Wayne Goddard's "mustard" protective finish. This attractive finish helps prevent rust and makes the knife easy to maintain. The bolster is integral -- a technique that, while common in production knives, is very rare in handmade knives due to the difficulty of implementation. The handle is formed from Hawaiian curly koa wood and has African blackwood accents. The wood has been stabilized so that it will hold up well under the rigorous demands of either a home or commercial kitchen. The knife has perfect balance and feels exceptional in the hand.
