Description: This is a monster of a meat slicer -- having a blade length of 17-1/2 inches! It is easily the most impressive meat slicer that I have ever seen.
Michael Rader, who was honored as a Mastersmith in June of 2010, is best known for creating dramatic swords and daggers finished with stunning woodwork handles. During the past few years, he has turned his attention to creating high performance chef's knives. The results are stunning!
The blade and bolster are Michael's own damascus. The bold random pattern is intriguing from a distance, and even more complexity is noticed when this steel is examined up close. Like his hunting knives, this seventeen-inch slicing knife was pre-tested for edge flex and cutting ability before assembly. The edge is extremely keen and will stay that way for a very long time.
The bolster is integral, a common technique in production knives, but very rare in handmade knives due to the difficulty of implementation. The handle is formed from koa with a box elder burl accent - Michael's woodwork is flawless, and handle is perfectly contoured to the hand. The wood has been stabilized so that it will hold up well under the rigorous demands of either a home or commercial kitchen. Alternating copper and G10 spacers highlight warm tones in the natural wood and assist the knife to adjust to temperature and humidity changes. The knife has perfect balance and feels exceptionally comfortable in the hand.
