Description: Michael Rader, who was honored as a journeyman smith June 2006, is best known for creating dramatic swords and daggers with woodwork that is beyond compare. When he put his attention to creating knives for chefs, the results were exceptional.
Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability before assembly. Many knife collectors and chefs feel that 52100 is among the best, if not the best, steel for edge holding. The edge is extremely keen and will stay that way for a very long time. The European Chef's knife (known as a gyuto in Japan) is well suited for use as a general purpose chef's knife -- from chopping, to slicing and dicing -- from fruits to vegetables and meats, the chef's knife is a great choice. The long blade is needed for the sawing motion required to cut meat and the slim profile keeps the weight low and the balance right.
The bolster is integral -- a technique that, while common in production knives, is very rare in handmade knives due to the difficulty of implementation. The handle is formed from curly maple with maple burl accents. It features his dramatic "puzzle piece" technique. Both have been stabilized to hold up well under the rigorous demands of either a home or commercial kitchen. The knife has perfect balance and feels exceptional in the hand.
