Description: Jim's knives are excellent pieces for the chef that wants a knife that is as attractive as it is useful. It utilizes a very deep choil (cut-out) for the forefinger to rest in. This makes the knife easy to hold onto even with slippery hands. The ATS-34 stainless steel blade was meticulously hand satin finished. It is double tempered to Rc 58-59 for excellent edge retention. A distal taper results in an optimal balance. The spine has been fileworked in a modified serpentine pattern. Cocobolo Dymondwood combines the beauty of natural wood with the stability and strength of synthetics. Excellent work throughout.
