Description: The santoku is the traditional Japanese chef's knife. This comfortable design is a fantastic multipurpose chopper. The santoku has quickly become the new favorite for chefs in the West. A scalloped Granton Edge assures that food more readily falls away from the side of the knife rather than sticking.
Misono is one of the most well-established knife producers of Western-style Japanese knives. Made in Seki, Japan, Misono knives incorporate modern technology with traditional craftsmanship. The result is one of the best professional-use knives to be found anywhere.
Misono's UX10 is the best of the Misono stainless steel knives. The blades are high quality Swedish stain-resistant steel and have been tempered to Hrc 59-60 for excellent edge holding. The unique slanted nickel/silver bolster balances the weight of the blade and handle. The UX10 is extremely sharp and comfortable to use.
The Pakkawood handles are made by compressing thin slices of wood which have been pressure treated with resin. This process results in a handle that is impervious to water and will hold up well to the demanding environment of both home and commercial kitchens. For strength, the handles are riveted to the full length tang. Each blade comes razor sharp. These knives are attractive, well balanced, and easy to sharpen. This knife is designed for right-handed use.
