Description: The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is suited to preparation of both meat and vegetables and is a great a general purpose chef's knife. The long blade is needed for the sawing motion required to cut meat and the slim profile keeps the weight low and the balance right.

The blade is tempered to Rc60 and will hold its edge considerably longer than most stainless and carbon steel Western-made knives.
The Pakkawood handles are made by compressing thin slices of wood which have been pressure treated with resin. This process results in a handle that is impervious to water and will hold up well to the demanding environment of both home and commercial kitchens. For strength, the handles are riveted to the full length tang. Each blade comes razor sharp. These knives are attractive, well balanced, and easy to sharpen. This knife is designed for right-handed use.
