Description: Fruit knives are utility knives that are perfect for slicing produce, meats, and fish. They are perfect general purpose kitchen utility knives.
Our Ohishi Kurouchi knives are forged from aogami (blue steel #2), among the most prized of carbon steels. This steel has exceptional edge holding and takes a keen edge. The center core is surrounded by layers of low carbon steel. The surface is rough ground (kurouchi finish) so that food does not stick to the sides of the knife while slicing. Because the blades are forged from carbon steel, rather than stainless steel, they require minimal additional care to prevent corrosion and staining, but have a far keener edge than their stainless counterparts.
A pinned bolster separates the blade from the handle. The triple riveted tang runs the full length of the handle for strength and longevity. The nicely rounded, comfortable handle is made from resin impregnated hardwood. This 'pakka wood' combines the best attributes of natural wood and resin, and holds up exceptionally well to the rigorous demands of a home or commercial kitchen.
