Description: Paring knives come in handy for all sorts of detail tasks around the kitchen. One of the most used knives for anything from peeling fruits and vegetables to chopping garlic.
Michael Rader, who was honored as a journeyman smith June 2006, is best known for creating dramatic swords and daggers with woodwork that is beyond compare. Over the last few years, he has gained fame as one of the best kitchen knife makers found anywhere. His knives, which have exceptional edge holding, also have perfect balance and feel in the hand.
Like his hunting knives, this paring knife was pre-tested for edge flex and cutting ability before assembly. The blade was forged using a san mai technique. Damascus steel forged in a complex random pattern incorporates 15N20 and 8660. A 52100 carbon steel core results in exceptional cutting ability. 52100 is considered by many knifemakers and collectors to be among the best -- if not the best -- carbon steel for edge holding. The damascus bolster is integral -- a technique that, while common in production knives, is very rare in handmade knives due to the difficulty of implementation.
The handle is formed from curly maple and has lacewood accents. The wood has been stabilized so that it will hold up well under the rigorous demands of either a home or commercial kitchen. Alternating G10 and copper spacers at the front of the handle are dramatic and assist the handle to adjust to changes in humidity and temperature. This knife has perfect balance and feels exceptional in the hand.
