William Henry's Pro Collection is built to the most rigorous standards of the commercial kitchen. The knives feature a laminated blade made from multiple layers of steel surrounding a core material of the finest alloy in cutlery. The core (edge material) is pure ZDP-189, a super-stainless powder metal die steel created by Hitachi Metals of Japan. This alloy achieves a hardness of RC 65-67, which translates to superior sharpness and edge retention (note that most kitchen cutlery, even fine cutlery, rarely reaches a hardness above RC 57). The exterior layers are 420 stainless steel. These supportive layers create a blade that is superb in terms of sharpness and flexibility.
Each blade is completely ground and honed by hand to an edge that measures an incredibly sharp edge. With proper maintenance, these knives will maintain a good working edge 5-6 times longer than typical high-grade cutlery, and can be resharpened in seconds, rather than minutes.
The handles are built from a hi-strength acrylic polymer, secured with six stainless pins -- a perfect choice for the rigorous demands of either a home or commercial kitchen.
