Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. This very special, high performance slicer is forged from steel made by Bill. This steel, known as Tamahagane in Japan, is the steel used to forge the legendary Katana. This is a knife that you won't want to put down.
This slicer is well suited for slicing and portioning meats and fish due to the thin, long blade. It is extremely sharp is sure to do a precision slice each time!
Bill began by making Tamahagane (Jewel steel) using a technique developed over 700 years ago in Japan. Magnetite is melted and impurities slowly removed to create a perfect cutting steel. After the blade was hand forged to shape, it was heat treated using a traditional Japanese technique. The spine was coated with clay, resulting in an undulating differential heat treatment line called a hamon. A keen, long lasting cutting edge is combined with a soft, supportive spine.
The integral bolster meets perfectly with sheep horn scales. The natural texture of the sheep horn results in a comfortable, non-slip handle. The knife has perfect balance and feels exceptional in the hand.
