Description: Handmade by Jim Arbuckle, this wharncliffe paring knife is an excellent piece for the chef who wants a knife that is as appealing as it is functional. It is the only one in the world.
This knife utilizes a very deep choil (cut-out) for the forefinger to rest in. This offers several different grip options, and makes the knife easy to grasp - even with slippery hands. Adding to usability and comfort, the edges of the blade spine have been rolled to reduce wear on your fingers during extended use.
The blade is made from ATS-34 stainless steel and has a hand-rubbed satin finish. It is hardened and double tempered to Rc 58-59 for excellent edge retention. To withstand the rigors of both commercial and home kitchens, the grips are secured with epoxy and nickel silver pins. Excellent fit and finish throughout!
