This piece is well suited for use as a general purpose chef's knife, good for any food prep task from chopping, to slicing and dicing -- from fruits to vegetables to meats.
Aaron is clearly inspired by the classic blade and handle shape of a European chef's knife. Many knife collectors and chefs feel that 52100 is among the best, if not the best, steel for edge holding. The blade has been differentially heat treated. The spine is soft and supportive, whereas the edge is hard. The edge is extremely keen and will stay that way for a very long time.
The desert ironwood handle swells comfortably in the palm for a sturdy grip. Ironwood scales fit perfectly to the stainless steel bolster. Mosaic pins are a nice finishing touch. Excellent fit and finish throughout!
