Description: This stunning hand forged chef's knife set is the creation of California artist Don Carlos Andrade. It's the first chef's knife set the highly proficient bladesmith has made to date. The pieces include a santoku, with a blade measurement of 6 inches, and overall length of 10-1/2 inches, a depth of 2.1 inches and a thickness of 0.13 inches, and a utility/fruit knife, with a 4-1/2 inch blade, and overall length of 8-1/2 inches, a depth of 0.9 inches and a thickness of 0.05 inches.
This beautifully designed and finished knife set is perfect for use both at home or in a busy professional kitchen. The blade shape is inspired by the Japanese culinary knife tradition, but with a handle scale design well suited to the western audience.
The satin finished santoku was forged to shape from 1095 carbon steel. Both the blade and full tang have been distal tapered for optimal balance. Don forges closely to shape and uses a draw file for final shaping rather than a grinder. Though this takes a lot of time, the process results in a blade which is both beautiful and astonishingly high-performing.
The satin finished utility knife was formed from 1095 carbon steel using the stock removal method, patiently hand-ground using Don's traditional artisan techniques. Both pieces have been superbly differentially heat treated with a distinctive and beautiful hamon, or heat treatment line, running the length of the blade.
The carbon steel Don used ensures exceptional edge holding, even under heavy use, though carbon steel knives do require slightly more care. We recommend using camellia oil after use to avoid rust.
The sculpted ebony toned Dymondwood handles provide a sure, comfortable grip. Both handles are completed with highly polished bronze pins - a nice complement to the lemonwood inlay. Exceptional work throughout, and a perfect choice for the young chef or culinary student.
