Description: This exceptional hand forged slicing knife is created by California artist Don Carlos Andrade. Slicers, or carving knives, have blades that are perfect for precise slicing tasks -- from portioning meats and fish to slicing vegetables. The slender profile means food is far less likely to stick and buckle than if a wider blade were used. The carbon steel blade will have exceptional edge holding, even under heavy use, though carbon steel knives do require slightly more care. We recommend using camellia oil after washing and drying thoroughly to avoid rust.
The satin finished blade was forged to shape from 1095 carbon steel. Both the blade and tang have been distal tapered for optimal balance. Don forges closely to shape and uses a draw file for final shaping rather than a grinder. Though this takes a lot of time, his fine control over the process results in a knife which is both beautiful and high-performing. Using a traditional Japanese technique, Don coated the spine of the blade with clay prior to quenching. This technique results in a soft, supportive spine with a keen, long lasting edge. The gently undulating differential hardness line is called a gunome hamon. The blade is completed with a graceful Spanish notch.
Ebony toned Dymondwood scales are set on a full, distal tapered tang, and the handle is contoured to provide a sure, comfortable grip. The handle is completed with hammered bronze pins.
