Description: If you're a great cook (or if you're married to one!) and would like to have a knife that is as attractive as it is useful but don't want the typical off-the shelf chef's knives, check out this handmade beauty by Jim Arbuckle.
This piece features a deep choil, or cut-out, for the forefinger to rest in. Typical of Jim's work, this makes the knife easy to hold even with slippery hands. The blade is made from ATS-34, high carbon stainless steel made by Hitachi. It is hardened and double tempered to about Rc 58-59, then hand rubbed to a satin finish. Jim has hand-carved modified bamboo filework along the tang, between the beautifully contoured DymondWood handle grips. The blade is quite hard and takes a keen, long lasting edge.
