Description: Handmade by Jim Arbuckle, this utility knife is an excellent choice for the chef that wants a knife that is as attractive as it is useful. This small sized chef's knife is a great choice for a variety of kitchen tasks ranging from chopping shallots and garlic to dicing bell peppers. It is handmade and one-of-a-kind - there's not another one like it in the world!
It utilizes a very deep choil, or semi-circular cut-out, in which the forefinger rests comfortably. This makes the knife easy to hold -- even in the demanding environment of a home or commercial kitchen. The blade is made from high performing ATS-34 stainless steel and has a hand-rubbed satin finish. It was hardened and double tempered to Hrc 58-59 for excellent edge retention and durability. The smooth spine moves into a serpentine fileworked tang. Rosewood toned Dymondwood scales are shaped to ensure a comfortable grip. Excellent fit and finish throughout!
