Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steel, results in edge holding that is far beyond other knives. This is a knife that will astonish you with its lightness, maneuverability and stunning good looks.
Petit gyuto hocho, meaning "small slicing knife", are great general purpose kitchen utility knives. The 6 inch, slender blade makes it very useful and versatile from slicing fruit to chopping garlic with enough belly to really get serious slicing done. The thin blade produces a very clean, even cut without bruising the food being sliced.
Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability before assembly. The heat treatment follows the formula developed by Bill Burke in conjunction with Ed Fowler and creates some of the sharpest and most long lasting edges found anywhere.
Bill chose ironwood with a stunning figure and polished the handle to a luster. The ironwood handle scales are set on a distal tapered full tang, carved to swell at the front of the handle, move into a slimmer waist and finally to swell again at the beak at the end of the handle. The knife has perfect balance and is an joy to use.
