Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steel, results in edge holding that is far beyond other knives. This is a magnificent chef's knife that will be an absolute joy to use.
This high performance chef's knife is a perfect choice as the "go-to" knife in the kitchen. The long blade is well suited for slicing and chopping vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. The distal tapered blade and tang ensure the knife is balanced to do most of the work!
The blade is forged in the Japanese style of san mai, meaning three layers - two layers of stainless steel damascus surround a central core of 52100 carbon steel. This carbon steel is considered by many knife makers to be the superlative steel for edge holding. Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability before assembly. The heat treatment follows the formula developed by Bill Burke in conjunction with Ed Fowler and creates some of the sharpest and most long lasting edges found anywhere.
The bolster is formed from 416 stainless steel and has been TIG welded to the blade for strength and durability. The handle is formed from light-toned sheep horn and is set with stainless steel pins. The bolster meets flawlessly with the well-matched sheep horn scales. The natural texture of the sheep horn results in a comfortable, non-slip handle. Bill is particularly well known for his sheep horn handles.
The knife has perfect balance and feels excellent in the hand.
