Description: Miyabi knives blend the tradition of Japanese bladesmithing with the excellence of German engineering. Made in Japan from exclusive German Zwilling formula stainless steel, this 90mm Kudamono - or sheepsfoot paring knife - combines the sharpness and geometry Japanese knives are famous for with the easy care and durability typical of German blades. A perfect choice for detail work or delicate cutting -- from taking the eyes out of potatoes to cutting the heads of strawberries and the veins out of bell peppers, the Kudamono is a great knife to grab.
The edge is hand-finished with the traditional 3-step Honbazuke method, meaning each blade is honed by an artisan to an angle of between 9.5 and 12 degrees per side. This acute angle, in combination with the Honbazuke method results in unbelievable sharpness.
The authentic D-shaped handle made from black linen Micarta has a wood-like appearance and feel, with the durability of synthetic material. The timeless elegance is enhanced by a mosaic pin.
