This piece, modeled on the German or French pattern chef's knife, is longer than the Japanese santoku and is sure to become a cherished primary chef's knife. The long blade is needed for the sawing motion required to cut meat and the distal taper and full tang ensure a perfect balance.
The 9-1/2 inch blade has a perfect arch for chopping and slicing. It is a nice balance between Japanese and European knives -- slightly thinner and higher performing than most German knives, though slightly thicker than many Japanese knives. The damascus blade incorporates 52100 and 15N20 carbon steels, forming intriguing damascene lines with beautiful contrast.
The handle is contoured comfortably for a sturdy grip in the hand. Giraffe bone scales, in warm tones ranging from cream to russet to chocolate, are set on a full tang and fit perfectly to the nickel silver bolster. The stabilized scales will hold up well to the heavy demands of either a professional or home kitchen. Loveless style fasteners are a nice finishing touch. Excellent fit and finish throughout!
