Description: Miyabi Kaizen knives blend the tradition of Japanese bladesmithing with the excellence of German engineering. This next generation of Miyabi knives, made in Seki Japan, combines the greatest hardening technology with the artistry of traditional craftsmanship.
This 4-1/2 inch utility knife is a perfect choice for slicing meats and vegetables as well as other precise kitchen tasks. The thin blade and short profile result in less resistance cutting through delicate foods.
The blade is formed from a VG10 (CMV60) super steel stainless core surrounded by 65 layer damascus. The Cryodur blade undergoes a four step hardening process that maximizes the properties of the steel. First the blade is hardened in a state of the art vacuum furnace. It is rapid quenched to room temperature and cryogenically treated at -321 degrees F. A double temper improves toughness. The result is a blade with outstanding edge retention, maximized corrosion resistance and toughness.
The edge is hand-finished with the traditional 3-step Honbazuke method, meaning each blade is honed by an artisan to an angle of between 9.5 and 12 degrees per side. This acute angle in combination with the Honbazuke method results in scalpel-like sharpness.
The exceptional blade is complemented by an equally stunning and durable handle made from black linen Micarta featuring a mosaic pin, red spacers, and a metal end cap.
