Description: This exceptional hand forged chef's knife is the creation of California artist Don Carlos Andrade. This 9 inch blade is perfect for use at home or in a professional setting. The carbon steel blade will have exceptional edge holding, even under heavy use, though carbon steel knives do require slightly more care. We recommend using camellia oil after use to avoid rust.
The antiqued blade was forged to shape from 1095 carbon steel. Both the blade and full tang have been distal tapered for optimal balance. Don forges closely to shape and uses a draw file for final shaping rather than a grinder. Though this takes a lot of time, the results are unique and exceptional. Using a traditional Japanese technique, Don coated the spine of the blade with clay prior to quenching. This technique, known as honyaki in Japan, results in a soft, supportive spine with a keen, long lasting edge. The gently undulating differential hardness line is called a gunome hamon.
The desert ironwood handle provides a sure, comfortable grip. Don carved and textured the ironwood, both making it visually interesting, but also providing a better grip, even with wet hands. The handle is completed with peened bronze pins. Exceptional work throughout.
