This high performance utility knife is perfect for slicing fruits, vegetables, and meats. The thin blade produces a very clean, even cut without bruising the food being sliced.
Bill began the blade by forging a many-layered dragon's breath pattern damascus from carbon steels. This is a pattern that Bill invented and has become a hallmark of his work. The resulting blade is among the most captivating kitchen knives that I have ever seen!
The heat treatment follows the formula developed by Bill Burke in conjunction with Mastersmith Ed Fowler and creates some of the sharpest and most long lasting edges found anywhere.
The mokume gane bolster was welded to the blade for strength and durability. The elegant damascene lines in the mokume gane were created by forging multiple layers of copper and nickel. The handle is sculpted from sheep horn, carved to swell toward the front of the handle, moving into a slimmer waist and finally to swelling again at the bird's beak. Bill chose sheep horn for the unique property of it staying grippy, even in wet conditions. The natural grain of the sheep horn complements Bill's damascus perfectly. The knife has perfect balance and will be an utter joy to use.
