Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steel, results in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This high performance utility knife is perfect for slicing fruits, vegetables, and meats. The thin blade produces a clean, even cut without bruising the food being sliced.
The blade was hand forged from 52100 carbon steel. Many knifemakers and users feel that 52100 is currently the best steel for knives. A differential heat treatment ensures a keen, long lasting edge with a soft, supportive spine.
Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability before assembly. The heat treatment follows the formulas developed in conjunction with Mastersmith Ed Fowler creates some of the sharpest, longest lasting edges found anywhere.
The stainless bolster was TIG welded to the blade for strength and durability. The handle is formed from presentation grade curly koa and is set with domed nickel silver pins. The wood is stabilized to make it hold up well to the rigorous demands of either a home or commercial kitchen. It is nicely carved to swell at the front of the handle, move into a slimmer waist and finally to swell again at the beak at the end of the handle. The knife has perfect balance and feels exceptional in the hand.
