Description: Handmade by Jim Arbuckle, this wharncliffe slicer is an excellent piece for the chef who wants a knife that is as appealing as it is functional. It is the only one in the world. This knife utilizes a very deep choil (cut-out) for the forefinger to rest in. This offers several different grip options, and makes the knife easy to grasp - even with slippery hands.
The blade is made from ATS-34 stainless steel and is hand satin finished. It is hardened and double tempered to Rc 58-59 for excellent edge retention. The spine has been rounded for a comfortable grip and moves into a serpentine fileworked tang. To withstand the rigors of either a commercial or home kitchen, the grips are secured with epoxy and nickel silver pins. Excellent fit and finish throughout!
