Description: This replacement handle was meticulously formed from enju wood (sophora japonica) along with very rare blond buffalo horn front and rear ferrules. One of the benefits of traditional Japanese chef's knives is that the handle can be easily replaced. Whether a larger handle is desired or the old handle has worn out, the blade (which will often be passed down through generations) will often out live the original handle. This ambidextrous handle combines the octagon and D-shaped handle styles and is one of the most comfortable Japanese handle designs. This handle is perfect for paring and petty knives up to 160mm (6-1/3 inches).
After the handle has been removed, it is easily replaced by packing tang hole of the new handle with a mixture of saw dusk and charcoal dust. The tang is then heated, taking care to protect the blade from heating (and therefore softening). A potato can be put on the blade edge to keep it cool. The tang is then lightly tapped into place.
