Description: Chinese cleavers may look similar to Western meat cleavers but they share more similarities with chef’s knives. Their blades are wide and rectangular like cleavers, but much thinner -- making them better suited for chopping, slicing and mincing. Chinese vegetable cleavers are ideal for vegetables, boneless meats, and noodles. The thin edge geometry makes it a precision tool, rather than a replacement for a Western meat cleaver. The tall height gives plenty of finger clearance over a cutting board and is great for moving food from cutting board to the pot.
