Description: The Butcher's Scimitar is designed to cleanly and confidently divide large cuts of meat, such as whole loins and shoulders, into smaller portions. It is also the preferred shape for filleting salmon and other large fish. The specially designed "hollow" blade (Granton edge) breaks suction, releasing food from the side of the blade, and allowing you to slice fish and meats without bruising the flesh.
