Description: Aaron Wilburn, a long time maker of knives for the outdoor enthusiast, has expanded his focus to include culinary knives - creating high-performing kitchen workhorses! This piece, modeled on the Japanese Kiritsuke Gyuto, is longer than the Japanese santoku and is sure to become a cherished primary chef's knife. The long blade is needed for the sawing motion required to cut meat and the distal taper and full tang ensure a perfect balance.
The 7-1/4 inch blade has a perfect arc for chopping and slicing. It is a nice balance between Japanese and European knives -- thinner and higher performing than most German knives, though slightly thicker than many Japanese knives. The damascus blade incorporates 52100 and 15N20 carbon steels, forming intriguing damascene lines with beautiful contrast. Because this knife is forged from carbon steels, it must be dried and oiled after use to avoid rust. We recommend using camellia oil for ease of care.
The handle is contoured into an elegant d-shape. Front and rear nickel silver fittings surround ebony and snakewood. The warm toned woods nicely complement each other. By using stabilized woods, Aaron ensures that the knife will hold up well to the heavy demands of either a professional or home kitchen. Excellent fit and finish throughout!
