This utility knife is a perfect choice for detail tasks. It is a good middle ground between a slicing knife and a paring knife and is a good choice when slicing tomatoes or chopping garlic. The 6-3/4 inch blade has a perfect shape. Aaron began by forging the blade to shape. Using traditional Japanese techniques, the spine was coated with clay prior to quenching. This results in a soft, supportive spine, with a keen, long lasting edge. A cryogenic treatment after quenching ensures optimal edge holding.
The D-shaped handle combines presentation grade ironwood with a sheep horn spacer. The two result in excellent contrast and will hold up well to the heavy demands of either a professional or home kitchen. Excellent fit and finish throughout!
