Akifusa's Powdered Metallurgical chef's knives have quickly become a favorite at Epicurean Edge. The san mai powdered metallurgical (PM) steel blade is similar to a Western Chef knife with the cutting qualities of the best Japanese-made knives. PM steel is created using a crucible technique and results in smaller grain structure and significantly longer edge holding. The center layer is SRS-15 PM stainless steel originally designed for metal cutting tools. It was hardened to Hrc 64 and is clad on the sides with soft SUS-405 stainless steel. This gives the blade an exceedingly tough, long lasting and chip resist edge that is relatively easy to resharpen. A forge-welded bolster seals the blade from the handle. The triple riveted tang runs the full length of the handle for strength and longevity. The nicely rounded, comfortable handle is made from resin impregnated hardwood. This 'Pakkawood' combines the best attributes of natural wood and resin, and holds up exceptionally well to the rigorous demands of a home or commercial kitchen. Both blade and tang are tapered for better balance and reduced fatigue during long use.
