Description: Knifemaker Lyle Brunckhorst is a Washington state bladesmith that Lyle mainly makes folders, utility and fighting knives, so to see him branch out into the culinary world is quite exciting.
This heavy chef's knife is a perfect choice as a general purpose knife in kitchen for chefs that prefer a sturdy, heavier German style culinary knife. The 7-1/4 inch blade is a perfect length for the rocking chop necessary to dice onions, chop garlic and perform other general purpose tasks in the kitchen.
Lyle forged the blade to shape using his own san mai steel. He began by forge welding thin layers of damascus to surround an O1 carbon steel core. The resulting blade is very dramatic and will have exceptional edge holding. Because it is made from carbon steels, we recommend using camellia oil to avoid rusting or oxidation.
The handle is comprised of rich brown ironbark wood scales. Subtle black striations in the wood grain complement the dark colorations in the damascus. Large stainless steel Loveless style rivets set the scales to the full distal tapered tang.
