Description: Journeyman smith Aaron Wilburn, a long time maker of knives for the outdoor enthusiast, has expanded his focus to include culinary knives - creating high-performing kitchen workhorses! This gyuto is true to its Japanese counterparts. The gyuto is the Japanese interpretation of a French pattern chefs knife. This comfortable design is a fantastic multipurpose chopper and is a favorite among chefs. A distal taper and full tang ensure a perfect balance.
The 7-1/8 inch blade has a perfect arc for chopping and slicing. The ladder pattern damascus blade incorporates 52100 and 15N20 carbon steels, forming intriguing damascene lines with beautiful contrast. The blade was then oil quenched three times. Many thermal cycles and normalizing steps assure consistent grain structure. Triple tempering at 400 degrees results in exceptional durability. A cryogenic treatment between temper cycles enhances the edge holding ability. The deeply etched blade helps release food from the sidewalls.
The handle is contoured comfortably for a sturdy grip in the hand. Stabilized bubinga in hues of raw sienna have a pleasing wood grain and is immediately captivating. The scales are set on a full tang and fit perfectly to the nickel silver bolster. The stabilized scales will hold up well to the heavy demands of either a professional or home kitchen. Loveless style fasteners are a nice finishing touch.
The knife is accompanied by a leather sheath formed from premium veg-tanned leather by Wickett & Craig. Excellent fit and finish throughout!
