Description: The kiritsuke gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is suited to preparation of meat and may be used as a general purpose chef's knife. The triangular tip results in a detail oriented, yet stronger tip than the gyuto. The long blade is needed for the slicing motion required to cut meat and the tall profile provides plenty of finger clearance over a cutting board. The long, straight spine is perfect for moving foods across a cutting board after chopping. The kiritsuke gyuto is a perfect choice to grab whether slicing onions, chopping parsley, or dicing meats.
The beauty of the SLD line by Yoshikane is matched only by its performance. Each knife is meticulously hand forged by Mr. Tsuneo Yoshida and his two nephews to create a lasting work of functional art. The two tone blade is produced by two different etching processes creating a dramatic high contrast between the Kiriba (blade bevel) and the flat of the blade. This creates a smooth surface for the blade to slide through material and a subtly uneven surface to help release foods being sliced. The blades are comprised of a hard inner SLD stainless steel core clad in stainless steel damascus (suminagashi). Because SLD is a relatively low chromium stainless steel, we recommend drying the knife after use. The mesmerizing suminagashi pattern flows freely on both sections further enhancing the unique styling of this line.
The hand forged blade features a rounded Mune (spine) and choil for secure, comfortable grip. The handles are made from enju wood with ferrules of very rare blond buffalo horn. The ambidextrous handles are octagonal at the top and rounded at the base, resulting in a comfortable, elegant shape that is pleasing to the eye and hand.
