Description: This is the first collaboration between bladesmiths Yoshikane and Daniel O'Malley. The result of their combined efforts are some of the most beautiful - and highest performing - chef's knives in the world.
The blade is forged using the san mai technique - a hard steel forms the cutting edge and is sandwiched between softer layers of steel. This results in a strong knife with very long edge holding. The core steel is rust resistant SKD die steel, originally designed for cutting metal. It was heat treated to Hrc 64 (very hard!) This is clad with soft SUS-405 stainless steel.
The maker, Mr. Tsuneo Yoshida, is proud of the hand hammered surface and distal taper. The distal taper results in a perfect balance. The hand hammered surface reduces the likelihood of food sticking to the side of the knife while chopping.
The handle was formed from presentation grade Arizona desert ironwood. A single piece of wood was cut so as to have the wood's complex figure travel across the distal tapered tang. The consummate wave pattern of the wood nicely reflects the tsuchime pattern in the blade. The handle is profiled so as to be very comfortable and provide a secure hold. It swells both at the palm and at the back. Two hidden bolt rivets and a complex mosaic pin secure the scales to the tang. The rivets are brass and have been profiled to match the wood. The mosaic pin combines brass with copper. This knife feels as good as it looks.
Accompanying the blade is a traditional Ho wood Saya.
