Description: Handmade by Jim Arbuckle, this carving knife is an excellent choice for carving poultry and slicing roasts. Only one in the world! It utilizes a very deep choil (cut-out) for the forefinger to rest in. This makes the knife easy to hold -- even with slippery hands.
The blade is made from 154CM stainless steel and was given a hand-rubbed satin finish. It was hardened and triple tempered to Rc 58-59 for excellent edge retention. The smooth, slightly rounded spine ensures no sharp edges will dig into your hand.
The rosewood toned Dymondwood grips are nicely contoured to offer a sure, comfortable grip. Dymondwood holds up exceptionally well to a demanding kitchen environment. Excellent fit and finish throughout!
