Description: This handmade utility/slicing knife was created by California bladesmith Don Carlos Andrade. Don creates knives of supreme quality with a distinctive character. This high performance slicing knife is well suited for slicing vegetables as well as meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The antiqued blade was forged to shape from 1095 carbon steel and distal tapered for optimal balance. Don forges closely to shape and uses a draw file for final shaping rather than a grinder. Though this takes a lot of time, the results are unique and exceptional. Using a traditional Japanese technique, Don coated the spine of the blade with clay prior to quenching. This technique, known as honyaki in Japan, results in a soft, supportive spine with a keen, long lasting edge. The gently undulating differential hardness line is called a hamon.
This utility/slicer has a hexagonal shaped handle -- heavily influenced by traditional Japanese handles, though enlarged, curved, and vertically taller with a wider flair toward the end. The handle is made from Arizona desert ironwood, and is inlaid with ebony, which lends a unique look to this piece. The handle also has a tribal wrapping of resin impregnated linen which helps provide a tactile feel and grip (not to mention being dramatic visually!)
