Description: Journeyman Smith Doug Campbell makes an exceptional chef's knife. This one will be a perfect choice to use as the primary choice in the kitchen -- from slicing fruits, meats, and vegetables to chopping garlic and onions, this knife will be a high performance work horse.
The 8 inch blade was hand forged from 52100 carbon steel. It is nicely distal tapered for optimal balance. A differential heat treatment results in a keen, long lasting edge, with strength and durability for the spine. Many makers and users feel that 52100 carbon steel is among the best, if not the best steel used on knives! Because this knife is carbon steel, we recommend using camellia oil to avoid rust and oxidation. This knife is perfectly balanced and is not one that you'll want to put down.
The handle is formed from stabilized curly koa with a buffalo horn ferrule. The handle, which is influenced by Japanese knives is a shape that I have not seen elsewhere. It is very comfortable and is sure to be a knife you won't want to put down.
