Description: Master Smith Aaron Wilburn, a long time maker of knives for the outdoor enthusiast, has expanded his focus to include culinary knives - creating high-performing kitchen workhorses! This gyuto is true to its Japanese counterparts. The gyuto is the Japanese interpretation of a French pattern chefs knife. The comfortable design, providing plenty of finger clearance over a cutting board, is a fantastic multipurpose chopper and is a favorite among chefs. It works great - from chopping onions and garlic, to slicing meats.
The 9-1/2 inch blade has a perfect arc for chopping and slicing. The blade is expertly balanced. Aaron forged the blade to shape from 52100 carbon steel. Many makers and collectors feel that this is the best steel available anywhere for use as a knife blade. The blade was then oil quenched multiple times. Many thermal cycles and normalizing steps assure consistent grain structure. Triple tempering at 400 degrees results in exceptional durability. A cryogenic treatment between temper cycles enhances the edge holding ability.
The handle is contoured comfortably for a sturdy grip in the hand. The dyed maple combined arm red tones with natural blond. The scales are set on a full tang and fit perfectly to the nickel silver bolster. The stabilized scales will hold up well to the heavy demands of either a professional or home kitchen. Loveless style fasteners are a nice finishing touch.
