The 6-1/4 inch blade has a perfect shape. The 52100 carbon steel blade was forged to shape. A multiple quench and multiple temper are combined with a cryogenic heat treatment for optimal edge holding. Many makers and knife users feel that 52100 is among the best, if not the best, steel for kitchen knives.
The handle is contoured comfortably for a sturdy grip in the hand. Arizona desert ironwood scales are set on a full tang and fit perfectly to the brass bolster. This resilient wood will hold up well to the heavy demands of either a professional or home kitchen. The handle is completed with brass rivets. Nice work throughout!
