Description: Journeyman Smith Erik Fritz has been working on chef's knife the last couple years and his latest knives have been amazing! The santoku is the traditional Japanese general purpose chef's knife. This comfortable design is a fantastic multipurpose chopper. The Santoku style has quickly become the new favorite for chefs in the West. The 7-1/8 inch blade is easily controlled, while the tall blade gives plenty of finger clearance over a cutting board.
The 7-1/8th inch blade was hand forged from 52100 carbon steel. It is nicely distal tapered for optimal balance. A differential heat treatment results in a keen, long lasting edge, with strength and durability for the spine. Many makers and users feel that 52100 carbon steel is among the best, if not the best steel used on knives! Because this knife is carbon steel, we recommend using camellia oil to avoid rust and oxidation. This knife is perfectly balanced and one that you'll have a hard time putting down.
The handle is formed from cocobolo scales, set on the full tang. It is set with two stainless steel pins. The warm toned wood has been nicely carved so as to swell and the palm move into a slimmer waist, and swell again as it approaches the beak.
